Cheesy Beef & Egg Muffins


A high-protein, meal-prep-friendly breakfast that’s easy to grab on busy mornings!


Ingredients (Makes 12 Muffins)

  • ½ lb ground beef

  • 10 large eggs

  • ½ cup shredded cheese (cheddar, feta, or your favorite)

  • ½ cup diced bell peppers (any color)

  • ¼ cup diced onions

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ¼ tsp smoked paprika (optional)

  • Butter or oil for greasing


Instructions

  1. Preheat oven to 375°F and grease a muffin tin.

  2. Brown the beef in a skillet over medium heat, breaking it into crumbles. Drain excess fat and set aside.

  3. Whisk the eggs in a large bowl, then mix in cheese, peppers, onions, and seasonings.

  4. Spoon the beef evenly into the muffin cups, then pour the egg mixture over the top.

  5. Bake for 18-22 minutes, or until the eggs are set.

  6. Let cool for a few minutes before popping them out.


Meal Prep Tips:

  • Store in the fridge for up to 5 days.

  • Freeze for later—just reheat in the microwave for 30-45 seconds.

  • Pair with avocado or hot sauce for an extra kick!
