Cheesy Beef & Egg Muffins

A high-protein, meal-prep-friendly breakfast that’s easy to grab on busy mornings!

Ingredients (Makes 12 Muffins)
½ lb ground beef
10 large eggs
½ cup shredded cheese (cheddar, feta, or your favorite)
½ cup diced bell peppers (any color)
¼ cup diced onions
½ tsp salt
½ tsp black pepper
½ tsp garlic powder
¼ tsp smoked paprika (optional)
Butter or oil for greasing
Instructions
Preheat oven to 375°F and grease a muffin tin.
Brown the beef in a skillet over medium heat, breaking it into crumbles. Drain excess fat and set aside.
Whisk the eggs in a large bowl, then mix in cheese, peppers, onions, and seasonings.
Spoon the beef evenly into the muffin cups, then pour the egg mixture over the top.
Bake for 18-22 minutes, or until the eggs are set.
Let cool for a few minutes before popping them out.
Meal Prep Tips:
Store in the fridge for up to 5 days.
Freeze for later—just reheat in the microwave for 30-45 seconds.
Pair with avocado or hot sauce for an extra kick!
