Cozy Curried Goat Stew

Ingredients:
2-3 lbs White Buffalo Ranch goat stew meat
2 tbsp bacon grease (or tallow)
Salt, to taste
1 onion, chopped
2–3 carrots, chopped
2–3 celery stalks, chopped
2–3 potatoes, cubed
2-3 tsp curry powder (to taste)
4 cups beef or chicken stock
Rice, for serving Instructions
Instructions:
Pat goat stew meat dry and season generously with salt.
Heat bacon grease in a heavy pot or Dutch oven.
Brown the meat on all sides, then remove and set aside.
In the same pot, sauté onions until soft. Add curry powder and cook until aromatic.
Return the meat to the pot along with carrots, celery, potatoes, and stock. Stir well.
Cover and simmer on low for 2–3 hours, until the meat is tender and falling apart.
Serve hot over rice — and don’t be surprised if the kids come back for seconds. 😉
