The animals are transported to the USDA processing facilities for harvesting, after to which the dry aging process commences.
Dry aging involves placing the meat in a regulated open-air environment to undergo a flavor alteration. Exposing the meat to air facilitates moisture extraction, allowing the natural enzymes in the beef to gradually break down the muscle fibers, resulting in increased tenderness.
Upon the completion of the dry aging process, the beef is carved, vacuum packed and sorted. You will then be issued with your final account for payment.
Once your order is complete, it will be ready for shipment. We add the optimal amount of dry ice to get your shipment to you in good condition.
