Ingredients :
1 lb ground beef
2 tablespoons olive oil
1 medium zucchini, diced
1 medium eggplant, diced
1 red onion, diced
3 cloves garlic, minced
1 cup cherry tomatoes, halved
1/4 cup kalamata olives, pitted and sliced
2 tablespoons tomato paste

Instructions:
Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
Add ground beef and cook until browned, about 5-7 minutes. Season with salt and pepper. Remove beef from skillet and set aside.
Add remaining olive oil to the skillet. Add zucchini, eggplant, and red onion. Cook, stirring occasionally, until vegetables are softened, about 5-7 minutes.
Add garlic and cook for 1 minute until fragrant.
Return beef to the skillet. Add tomato paste, oregano, thyme, and cinnamon. Stir to combine.
Add cherry tomatoes and olives. Cook for 3-4 minutes until tomatoes start to break down.
Remove from heat and stir in fresh parsley and mint.
Top with crumbled feta cheese and toasted pine nuts.
Serve with lemon wedges for squeezing over the top.
